I know peanut butter and chocolate go together, but peanut butter and fish?  Sometimes you stumble on a GREAT recipe by accident.  That’s what happened to me last night.  I was making an African Peanut Stew so we would have a nice soup for lunch this week.  While the soup was simmering, I started preparing dinner.  I was going to make steamed fish with soy and ginger which is a dish I make all the time.  But as I put a big scoop of peanut butter into the stew, I wondered how it would taste on the fish.

AMAZING is the word my husband Frank and I both said when we took our first bite.  This fish recipe is so easy AND inexpensive that you must try it.  Plus, all the ingredients cook in one pan!  It may sound weird, but trust me, you will love it.

Ingredients

  • Fish (2-4 fillets of a firm white fish—like Basa or Flounder)
  • Ginger (2-3 TBSP, peeled & minced)
  • Soy Sauce (1-2 TBSP)
  • Natural Chunky Peanut Butter (1 TBSP per fillet)
  • Sugar Snap Peas (as many as you like)
  • Tomatoes (1-2 chopped)
  • Cilantro (2-3 TBSP chopped)
  • Crushed red peppers (optional)

Sauté ginger in a tiny bit of olive oil and soy sauce for 2-3 minutes.  Add the peanut butter and keep stirring until it melts.  Add the fish and sprinkle the snap peas around the pan.  Cover with a lid for a few minutes (depending on the thickness of the fish) then flip the fish over.  Cook another 4-5 minutes until the fish and snap peas are done.  Plate it immediately and add freshly chopped tomatoes and cilantro.  And, if you love spicy food, don’t forget to add some crushed red peppers on top.
